protein sugar cookies

What’s more fun during the holidays than baking sweet treats in a cozy kitchen while Christmas music plays and the familiar scent of cinnamon and spice warmly surrounds you?

But the joy of eating those sweets can lose its luster when you’re trying to live a fit life with health and weight in mind. This recipe, adapted from Protein Buff is the perfect way to get in a high-protein treat without all of the sugar and gluten that leaves you bloated and packing on weight. Enjoy these Christmas treats any time of the year!

Combine in a large bowl:

  • 1 cup Select Protein Snickerdoodle flavor (or Quest Vanilla, or any other sweet protein that bakes well)
  • 1 cup gluten-free flour (I used Trader Joe’s brand)
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda

In a separate bowl combine the following, then slowly beat into the ingredients above

  • 1/4 tsp vanilla extract
  • 3/4 cup butter
  • 1 egg
  • 1 egg white
  • 3/4 cup Truvia (I also added a few drops of vanilla Stevia)

Bake at 350 for about 7 minutes. When cooled, decorate with festive protein frosting:

Frosting – combine the following to taste and consistency as desired, until it looks like regular frosting:

  • Protein Powder (same as used above)
  • Almond milk
  • Stevia (if needed to taste)
  • Red or green food coloring
